Finely chop up a pear to make 1/2 cup. Place that in a stockpot with 1/4 cup of organic sugar, 1/3 cup of water, and 1/8 cup of vanilla extract/syrup. Stir that mix and bring it to a boil. Once it starts to boil, bring down the heat so you have a simmer and stir frequently for 8 minutes (or until the liquid becomes a light amber)
Take that mixture, pour it through a strainer into a mason jar. Smash the pears in the strainer with the back of a spoon to get the extra pear juice. Make sure the mixture is at room temperature before using it.
Take a bourbon glass and cover the rim with cinnamon sugar. Place two small slices of pear inside the glass. Pour at least 2 oz of bourbon and fill the rest of the glass up with the pear vanilla simple syrup. Stir to mix and top off with a few ice cubes. Sip and Enjoy!
